
Pizza Sauce
When life gives you tomatoes, make this beautiful sauce and create pizza out of whatever you can find.

1 kilo Roma tomatoes, halved
6 cloves garlic, peeled
1 cup basil leaves
1/4 cup extra version olive oil- ideally a lovely shade of green
1. Line a surface with teatowels. Salt the cut-sides of all the tomatoes, and then lay (cut-side down) on the teatowels. Drain for an hour.
2. Set your oven to 240c.
3. Put your tomatoes, cut side up, in a large baking pan. Keep them in one single layer. Tuck your garlic cloves amonst them, drizzle the whole thing with a bit of oil, and pop into the oven. Roast for 45 minutes.
4. Once cooked, tip the tomatoes and garlic into a blender or food processor. Puree with the extra virgin olive oil and basil. Taste for seasoning, adjust to your liking, and start making pizza!
