Guacamole, Tex-Mex Style

1 avocado
¼ red onion, finely chopped
The juice from half a lime
1-2 tsp salt
â…“ cup chopped tomatoes

Mash the avocado, making sure to leave some chunks. Add other ingredients and mix well. Serve immediately, or store in the fridge with clingfilm directly touching the dip.
